No Overnight Results
Gluten Free Dining
Last night was date night. Since I’m eating gluten free, we went to Mother’s Kitchen, a healthy restaurant/market in our neighborhood. Their menu is fantastic and great for ideas in your own kitchen! You can reach it by clicking on the link on the right. I had potato tacos (on naturally gluten free corn tortillas) with refried beans and brown rice. I added some extra flavor to the meal with Spike, a gluten free seasoning. It was delicious and I saved half of it for today’s lunch. Lucky me!
This morning I made scrambled eggs and toast for our family. Since I wasn’t eating the toast, I added toppings to my eggs (tomatoes, goat cheese & avocado) so that I didn’t feel deprived. So far eating gluten free is going well. My joints are still painful, though, so I didn’t see overnight results (One can always hope, right?).
